The variety is a local Sicilian crop obtained through selection from the Mahmoudi population around 1915. The plant is characterized by a tall stem, which allows for effective competition with weeds, and stable yield under Mediterranean climate conditions, although it is inferior in productivity to modern intensive hybrids.

The grain of the variety possesses a specific protein composition, in particular high molecular weight glutenins, which determines the technological properties of the dough. Products made from it are in demand in organic farming for the manufacture of pasta, pizza, and traditional Sicilian bread.
