The latter include the starch-iodine test for starch breakdown, measuring flesh firmness with a penetrometer, determining soluble solids content with a refractometer, and calculating the sugar-acid ratio.
The ripening group critically influences agrotechnology and harvest organization. Summer varieties must be harvested strictly during the maturity period to preserve flavor, while winter varieties require strict adherence to optimal harvest maturity dates to ensure long-term storage potential of up to 200 days or more.
