Classification of apple varieties based on fruit ripening periods, which determines harvesting and storage strategies. It is based on chronological indicators and physicochemical fruit parameters.

In pomology, apple trees are divided into three groups: summer varieties reach consumer maturity in July–August, autumn varieties in September–October, and winter varieties in late September or later. The winter group is further subdivided into early-winter, mid-winter, and late-winter varieties depending on their storage potential.

Determining a variety's ripening group is based on a comprehensive assessment of chronological indicators, such as the sum of active temperatures and the period from flowering to harvest, as well as physiological and chemical methods. The latter include the starch-iodine test for starch breakdown, measuring flesh firmness with a penetrometer, determining soluble solids content with a refractometer, and calculating the sugar-acid ratio.

The ripening group critically influences agrotechnology and harvest organization. Summer varieties must be harvested strictly during the maturity period to preserve flavor, while winter varieties require strict adherence to optimal harvest maturity dates to ensure long-term storage potential of up to 200 days or more.
