Rayotte de Nommay is a traditional regional variety that originated naturally in the commune of Nommay, Doubs department. The fruits are characterized by a regular conical shape and thick skin with red stripes and a "watercore" effect. The taste of the fruits is rated as sweet and sour.

The variety belongs to the mid-season maturity group, with a consumption period lasting from September to December. The apple tree has a versatile use, including culinary processing and juice production. Currently, the variety is the subject of genetic resource conservation initiatives in regions of France.
