For processing zucchini, the stage of technical maturity and the firmness of the fruit pulp are of fundamental importance. The optimal raw material consists of young ovaries, as overgrown fruits are prone to skin and seed coarsening, as well as loss of structural integrity during heat treatment.

When canning zucchini, the selection of the maturity stage plays a key role: young ovaries with tender pulp and underdeveloped seeds are used for processing. The use of overgrown fruits is undesirable due to the risk of a cottony consistency and tough skin. Among varietal differences, zucchini are preferred, as they have a thinner skin and smaller seeds that do not require removal before processing.
Unlike cucumbers, zucchini pulp is prone to softening after pickling, which necessitates the selection of varieties with the densest possible structure to maintain the shape of the slices. The neutral taste of the fruits allows them to actively absorb the aromas of the marinade and spices, making zucchini a universal component for complex vegetable preserves and spreads (caviar).
The technological qualities of the raw material are determined by the variety's ability to remain in the growing stage longer while maintaining a thin skin. There are no special agrotechnical practices to improve the pickling qualities of the fruits; therefore, the quality of the finished product depends directly on the timely harvesting at the stage of technical maturity.
