This indicator is significantly affected by mineral nutrition: the application of high doses of nitrogen fertilizers, which stimulate protein accumulation, often leads to a decrease in the starch fraction. Furthermore, the level of starchiness is directly related to grain plumpness: full-bodied caryopses contain more starch than shriveled grain, which has a higher proportion of husks and fiber.

The technological properties of starch in rye are closely linked to the activity of the enzymatic system, particularly alpha-amylase. Excessive activity of this enzyme, which occurs during pre-harvest sprouting, leads to the degradation of starch and results in a doughy, sticky crumb during baking. For feed purposes, the efficiency of starch utilization is limited by the presence of pentosans and beta-glucans, which increase the viscosity of intestinal contents in animals, hindering the absorption of nutrients.
