The physical-mechanical indicator of raspberry shelf life is the berry crushing force. Fruits with a value below 5.0 N are considered soft and non-transportable, while varieties with a value of 7.2–8.3 N and higher are recognized as firm and suitable for transport.
Organoleptic assessment of shelf life is conducted using a 5-point scale, monitoring the appearance and integrity of the berries during storage. High fruit firmness scores allow for the use of industrial harvesting technology and require prompt cooling of the crop to a temperature of +4…+6ºС to maintain market quality.
