Raspberry shelf life is determined by fruit firmness, which is assessed by the force required to crush the berries, measured in Newtons. This indicator is key for transportability and suitability of berries for fresh market retail.

High fruit firmness scores allow for the use of industrial harvesting technology and require prompt cooling of the crop to a temperature of +4…+6ºС to maintain market quality.
