The primary criterion for suitability is the quality of the 'shank'—the pseudostem—whose characteristics (height, diameter, and degree of blanching) determine the yield of marketable products and technological losses. For industrial use, the cleanliness of the white part is critical, as the presence of soil or green areas lowers the grade of the raw material.

During mechanical slicing, leeks tend to exude mucilaginous substances that cause fragments to stick together, requiring special equipment adjustments. Separating the plant into white and green parts is justified by differences in their biochemical profiles: the greens, which have a high concentration of polyphenols and sulfur compounds, are more often used for drying, while the white part is used for freezing and culinary purposes.

During processing, raw materials lose up to 30% of their ascorbic acid and sugars. Breeding for processing suitability aims to preserve these nutrients and ensure the stability of the final product's composition, which depends directly on the varietal characteristics of the crop.
