The freezing suitability of leeks is determined by the necessity of blanching to preserve vitamin content and pre-slicing to compensate for the loss of cell wall firmness.

Leeks are subject to significant losses of vitamin C, reaching up to 70%, and active enzymatic processes during freezing. Short-term blanching at 70°C for 90 seconds helps minimize tissue damage and stabilize biologically active compounds.
During the freezing process, cell walls are destroyed, which makes the product soft after thawing. Because of this, leeks are suitable primarily for cooked dishes. Unlike bulb onions, freezing leeks does not lead to a sharp change in aromatic compounds.
Technological preparation requires slicing before freezing and pre-cooling on trays to maintain loose texture. When freezing the white and green parts of the plant, their different physico-mechanical characteristics are taken into account.
