The suitability of broccoli for industrial processing is determined by the density of the inflorescences, biochemical composition, and the ability to maintain structure, color, and flavor after flash freezing.

An important breeding criterion is the ability of the inflorescences to retain firmness, color, and aroma, preventing tissue softening, which is characteristic of this species when technology is violated or unsuitable varieties are chosen.

Breeding is aimed at creating hybrids that ensure the stability of quality indicators, including the regenerative capacity of the plants. Processing efficiency also depends on the protein, vitamin C, and vitamin K content, and the quality assessment of the raw material is conducted based on the compliance of these characteristics with the requirements of specific technological cycles.
