Suitability of tomato for processing

The set of tomato fruit characteristics that determine their efficiency for use in the production of pastes, juices, and canned goods. The main criteria are the levels of dry matter, composition of pectins, acids, lycopene, as well as technological properties for mechanical harvesting.
