Sugar content is an indicator of the concentration of natural sugars in fruits or root crops, determining nutritional value and suitability for processing. This genetic trait is measured in degrees Brix (°Brix) or sugar degrees (°Z) and is critical for assessing variety quality.

Sugar content characterizes the concentration of glucose, fructose, and sucrose in plant tissues. For the processing industry, this indicator is a key requirement determining the yield of the finished product, whereas for table crops, it shapes the flavor balance in combination with acidity. A variety's ability to accumulate sugars promptly also allows for effective planning of harvest dates and production facility capacity.
Sugar content is measured using laboratory and field methods. Refractometry allows for the assessment of solids content in degrees Brix, polarimetry determines sucrose concentration in international sugar degrees, and areometry establishes the indicator by measuring juice density. The choice of method depends on the crop and the objectives of the analysis, whether for express assessment or establishing the commercial value of raw materials.
The realization of the genetic potential for sugar content depends on environmental conditions and agrotechnics. Light intensity and the sum of active temperatures, which determine the intensity of photosynthesis, have a significant influence, as do moisture availability and mineral nutrition, particularly potassium supply. During variety trials, breeding material is compared with standards, which allows for the identification of varieties with high stability of sugar accumulation under various climatic conditions.
