Blackberry sugar content is expressed as the total soluble solids (TSS) content, measured in degrees Brix. It is a key indicator of fruit consumer value, determining harvest timing and flavor quality.

For blackberries, a value of 8–10 °Bx is considered standard, while values above 11–12 °Bx are rated as high. Under optimal cultivation conditions, modern varieties can reach 14.7 °Bx or more. Real-time monitoring of sugar levels is carried out using a refractometer, which is used to analyze the juice of freshly harvested berries.
Sugar accumulation in the fruit depends on agrotechnical factors: light regime, potassium nutrition levels, and moisture control. Excessive irrigation during the ripening period leads to dilution of the juice and a decrease in the concentration of soluble solids, while planting density and plant disease incidence negatively affect metabolic processes and the final quality of the yield.
