Blackberry Taste and Aroma

Blackberry taste quality is assessed organoleptically on a 5-point scale and biochemically via the sugar-to-acid ratio. A sugar content in the range of 10–14% is considered optimal, ensuring a harmonious dessert flavor.

To determine the taste and aroma of blackberries, a tasting point system and biochemical analysis are used, aimed at measuring the concentration of soluble solids and titratable acids. Berries with a harmonious balance of sweetness and acidity possess high dessert quality.

Sugar accumulation and the formation of a characteristic aroma depend directly on the berries reaching full biological maturity. Failure to follow proper agrotechnical practices, lack of sunlight, or overloading the bush with yield provoke an accumulation of excessive acid and the absence of a distinct aromatic profile, which reduces the market value of the cultivar.
