Unlike processing varieties, they do not require a high concentration of soluble solids, as they are not intended for cooking down or intensive industrial processing.
This group of varieties is adapted to manual harvesting, which allows for the cultivation of plants with less dense skins and a more delicate fruit texture. Indeterminate plant types are often used in production to ensure an extended harvest period, whereas industrial varieties require concentrated ripening for mechanized harvesting.
