Fresh market varieties are evaluated based on the sugar-to-acid balance, aroma intensity, flesh consistency, and external fruit characteristics, such as the absence of green shoulders and uniformity of shape. Unlike processing varieties, they do not require a high concentration of soluble solids, as they are not intended for cooking down or intensive industrial processing.
This group of varieties is adapted to manual harvesting, which allows for the cultivation of plants with less dense skins and a more delicate fruit texture. Indeterminate plant types are often used in production to ensure an extended harvest period, whereas industrial varieties require concentrated ripening for mechanized harvesting.
