Spinach marketability is defined as the ratio of the weight of standard produce, free from mechanical damage, diseases, and signs of bolting, to the total weight of the harvested yield. In professional variety trials, a marketable yield of 80–85% or higher is considered a good indicator.

The primary cause of reduced marketability is the plant transitioning to the generative phase, triggered by a photoperiod exceeding 12 hours or air temperatures above 25 °C. Under these conditions, the leaf rosette becomes coarse and produces a stem, rendering the produce unsuitable for fresh market sale.

The marketability indicator is also significantly influenced by cultivation technology, including adherence to sowing dates and plant density. Non-optimal sowing density can lead to the development of diseases or rosette deformation, while failure to observe timing makes it impossible to obtain produce in the stage of commercial maturity.
