Spinach Maturity Group

Spinacia oleracea L.

The maturity group of spinach is determined by the time interval in days from the emergence of full seedlings to the formation of a marketable leaf rosette before the onset of active bolting.

In the reference 168 varieties crop Spinach, where this is mentioned in the description.

The classification of spinach varieties into maturity groups is based on the number of days from emergence to harvest: early-maturing varieties ripen in 15–25 days, mid-maturing in 20–30 days, and late-maturing require 25–40 days or more. Determining the maturity group is essential for planning a continuous production supply.

This trait is directly related to the photoperiodic response of spinach. Early-maturing varieties are prone to premature bolting and flower stalk formation under long-day conditions, which shortens the harvest period. Modern breeding is focused on developing slow-bolting hybrids that extend the availability period of marketable produce.
