The maturity group of spinach is determined by the time interval in days from the emergence of full seedlings to the formation of a marketable leaf rosette before the onset of active bolting.

This trait is directly related to the photoperiodic response of spinach. Early-maturing varieties are prone to premature bolting and flower stalk formation under long-day conditions, which shortens the harvest period.
