The transportability of pepper is determined by a combination of morphological and physiological factors of the fruit. The key anatomical criterion is the pericarp wall thickness: fruits with a wall thickness of more than 6–7 mm have higher resistance to deformation and mechanical damage.

The density of the skin, which protects the fruit from damage during transportation, is also of great importance. The phytosanitary condition of the crop has a significant influence on the indicator, as infection with diseases, including blossom-end rot, significantly reduces the preservation and marketability of the produce during transport.
