Chicory growing season

The time interval from seedling emergence to the physiological maturity of root crops, determining the timing of inulin accumulation and harvesting operations. It ranges from 110 to 160 days depending on the variety and climatic conditions.

Root chicory varieties are classified into early-maturing (less than 125 days), mid-maturing (125–139 days), and late-maturing (more than 139 days). This period directly correlates with the dynamics of accumulation of target substances, including fructose and inulin, the maximum concentration of which is reached by autumn.

Full crop development requires a sum of active temperatures in the range of 2100–2400 °C and at least 200–250 mm of precipitation. Harvesting typically occurs from late September through November, as premature cessation of the growing season hinders root filling, while excessive prolongation reduces its quality.
