During commercial maturity, the height of the endive leaf rosette ranges from 10 to 40 cm. Upon transition to the generative phase, the plant forms a flowering stem reaching a height of 50–150 cm. Measurements are taken from the soil level to the tips of the leaves or the top of the flowering stem using a representative sample.

The plant height trait influences cultivation technology: compact forms allow for increased planting density, while the shape and height of the rosette determine blanching methods. A premature increase in plant height indicates bolting, which reduces product quality by causing leaf coarsening and the accumulation of bitterness.
