The processing suitability of swede for freezing is determined by a high dry matter content and flesh density, which allows the nutritional properties and root structure to be preserved, provided that preparation conditions are met.

Swede differs from other root crops in its high content of dry matter (9–15%) and sugars (4–9%), which contributes to the preservation of flavor characteristics after freezing. Due to the increased density of the flesh, the crop possesses structural stability; however, blanching is recognized as a mandatory operation to prevent excessive softening and enzyme inactivation.

The quality of the final product depends directly on the freezing rate and the maintenance of a storage temperature no higher than −18 °C. When selecting varieties for processing, preference should be given to specimens with the highest dry matter content indicators, as they demonstrate better retention of the original texture.
