The Mexican lime is the most vulnerable species to low temperatures among commercial citrus crops. When exposed to temperatures below -2…-3°C, plants experience critical tissue damage, manifested by significant electrolytic leakage, chlorophyll degradation, and impaired functioning of photosystem II.

Technologically, freezing is an effective method for preserving fruits and juice. Whole fruits lose textural density after thawing, becoming soft, which makes them optimal for subsequent juice or zest extraction. Freezing juice in portioned containers allows for the effective preservation of the product's flavor profile given the limited shelf life of the fresh harvest.
