Suitability of Dahlias for Freezing

Dahlias are not frost-hardy, and any attempt to freeze them leads to the death of the plant tissues.

Dahlia tubers contain a high percentage of water, so at sub-zero temperatures, the resulting ice crystals rupture the cell walls. Upon thawing, the damaged tissues become soft and watery, which inevitably leads to their rapid fermentation and decay.

Brief light frosts down to -1°C damage only the aerial parts; however, freezing of the soil to the depth of the tubers is fatal to them. To preserve the planting material, it must be dug up after the first frosts and stored in a frost-free area at a temperature of +5...+8°C.
