The bulb has a characteristic flattened shape and a dark violet, purple shade of the outer scales. The variety belongs to the Galdar onion group, grown in the municipalities of Galdar and Agaete in the northwest of the island of Gran Canaria.
The variety is early or mid-early maturing, with the main harvest period falling in May. In terms of taste, the onion is characterized by a medium degree of pungency. It is adapted to the local microclimate as a result of many years of folk selection and is officially recognized as a conservation variety.
This onion is widely used in local cuisine; in particular, it is considered a traditional accompaniment to gofio in various forms of serving.
