The Brgujski variety is a folk selection grown for centuries in the Velika Brgud area. The heads have medium density, an average diameter of about 22 cm, and a length of about 13 cm. The color of the outer leaves is reddish-green, and the inner part of the head possesses a violet tint of medium intensity.
Technological maturity of the variety in Croatian conditions occurs by mid-October. Being a natural population, the variety is distinguished by high variability of traits and a specific profile of volatile compounds, which makes it preferable for fermentation and the preparation of traditional dishes.
