The Cornet d'Anjou variety belongs to the escarole group (broad-leaved endive). The plant forms a dense, compact rosette. Leaves are broad, with a crunchy texture and a characteristic curve resembling the opening of a horn. With proper care, the leaves in the center of the rosette curl and naturally lighten.

The crop is ready for harvest 80–90 days after sowing. The variety possesses good cold tolerance, which allows it to be grown in the autumn-winter period. To reduce natural bitterness, the central part of the rosette is blanched by limiting light exposure. Excessive light increases bitterness, and early spring sowings carry a risk of premature bolting.

The endive is used fresh for salads and in culinary preparations, including making gratins. The plant contains inulin and vitamins.
