The Chicorée Tête d'anguille variety is historically valued as a vegetable plant, the roots of which are consumed cooked. Sowing is carried out in May-June following a planting scheme with row spacing of 25 cm and a distance of 10 cm between plants.

Harvesting is carried out in October, followed by drying the roots for two days. The variety is sensitive to frosts from 0 to -5 degrees Celsius. The roots store well in a cellar, and when kept at room temperature for ten days, a significant part of the bitterness is removed from them.
