The plant has a biennial development cycle. In the first year, a root crop is formed, and in the winter period, the edible part is forced — a dense, elongated head of cream-white color. Roots 20–30 cm long and 3–4 cm in diameter are used for forcing.
The absence of light during the shoot formation process is necessary to maintain the light color of the leaves and prevent excessive bitterness. The leaves are characterized by a crunchy texture and a delicate taste with a slight bitterness. The crop is intended for use in fresh form or after thermal processing.
