This ecotype originates from the Apulia region, the city of Molfetta. The plant belongs to the asparagus chicory variety and forms a developed head. The inner shoots, puntarelle, are characterized by a compact shape and a less elongated appearance compared to Roman varieties, while maintaining a specific flavor.
