The root crops of the variety Umanskyi 97 are used for the industrial production of soluble chicory. The plant is grown as a biennial in cultivation.

The inulin content in the root crops varies from 13 to 16% according to the results of a number of publications, while values of up to 25.1% are mentioned in some studies. Specific morphological characteristics, maturity group, and indicators of disease resistance are not presented in open sources.
