The Cardinal variety differs from other Breton varieties by the distinct purple color of the heads. The plant forms a closed head, and the leaves of this variety have less thorniness compared to other types of artichokes.

Planting is carried out in May-June or at the end of the year. The variety provides two harvest periods: May-June and September-October. The produce is commercially significant for specialized cooperatives in the Northern Brittany region.
