The name Cardone gobbo means "humpbacked cardoon." It is a technology where plants are bent and covered with soil: in the absence of light, leaf petioles bend, lose their bitterness, and become white, tender, and crisp. It is these fleshy petioles that are consumed in cardoon, not the inflorescences as in artichoke.

The plants reach a height of 1.5 meters and have grayish-green leaves. The most well-known variety for such processing is Gobbo di Nizza Monferrato. In official registers, this name may act as a synonym for other local varietal forms of cardoon suitable for blanching.
