The tree of the GRIGIO COMPOSTA variety, also known as Gris d'la Composta, is characterized by medium vigor. The variety is medium-late to late: harvesting takes place from late September to early October, and flowering occurs at mid-season.

The fruits are medium-large in size, have a sweet taste and a crisp texture with an intense aroma. In their raw state, the fruits may be unsuitable for eating, so they were traditionally fermented in tanks with water for 20–30 days.
