The variety is of folk origin and was discovered in the Val Chisone valley, Turin province. The tree is characterized by medium vigor. Harvest periods range from the third ten-day period of September to mid-October.

The fruits are medium to large in size, dense, and crunchy. Consumption in raw form is often considered unsuitable. Historically, apples of the GRIGIO DELLA COMPOSTA variety were used for fermentation by keeping them in vats of water under cover for 20–30 days.
