The Peñarudes variety is a technical cultivar officially authorized for cider production within the scope of the protected designation of origin DOP Sidra de Asturias. The fruits belong to the acidic type: total acidity is 5.50 g/l, and phenol content is 1.23 g/l expressed as tannic acid.

The tree is characterized by late fruit ripening, which occurs in the second ten-day period of November, and medium-late flowering periods. The variety has a fairly high yield, as well as low to medium sensitivity to fungal diseases.
