The Perelló apple variety is a traditional crop adapted to the conditions of arid mountainous regions at an altitude of over 700 meters, where it is valued for its unique taste and adaptation to the local climate. It is a late-ripening variety that requires cold conditions for normal development.

The fruit ripening process involves a specific post-harvest technique: the fruits are kept in closed rooms, covered with fabric, for about a month. During this period, the fruit skin changes color to brownish-yellow, which is referred to as "acanellat" in the local dialect.
