Hamburska parsley is a group of varieties selected for the production of fleshy root vegetables. The plant is universal: both cream-white root vegetables, which taste like a mixture of celery and parsley, and tender greens are consumed. The height of the leaf rosette is 30–60 cm.
The plant is biennial, but it is grown as an annual crop. Technical maturity occurs in the period from 70 to 90 days after emergence. The crop is cold-resistant and withstands temperature drops down to -9°C. It prefers fertile loamy and chernozem soils and requires thinning of crops.
The group may be susceptible to diseases such as septoria leaf spot, rust, and gray mold. In modern breeding, the term "Hamburska" is more often used to designate a type variety to which a number of specific breeding varieties belong.
