The Bonita Blanca variety belongs to the category of ancient potatoes of the Canary Islands and is a folk selection brought from South America before the 20th century. The plant is genetically classified as Solanum tuberosum subsp. andigenum and has protected geographical status.

Tubers have a round or slightly oblong shape, light brown skin with rare purple or reddish spots and light yellow flesh. Eyes are of medium depth. The variety has low yield and is susceptible to viral diseases.

Cultivated primarily at altitudes from 500 to 1200 meters above sea level in conditions of high humidity. The main culinary purpose is the preparation of the traditional dish of potatoes boiled in their skins.
