The tubers have an oblong, flattened shape; smaller specimens are more rounded. The skin is light brown with orange tones and pinkish spots around the shallow eyes. The flesh is yellow. The sprouts have a pink color with spots along the length and at the tip.
The variety has a long dormancy period. Yield is traditionally lower compared to modern commercial varieties. It originates from plants brought from the Andean region in the 16th century and is part of the agricultural heritage of the Canary Islands.
It is used as a table variety. The designation Cultesa indicates that it has undergone a process of elimination of viral infections by tissue culture to preserve the gene pool and provide farmers with quality planting material.
