The Borralla variety, also known as Melonera, belongs to the ancient Canarian varieties introduced from South America in the XVI–XVII centuries. Genetically it belongs to the Solanum tuberosum ssp. andigena group and is adapted to the local volcanic soils and climate of Tenerife.
The tubers have an oblong shape, light brown skin with orange shades and pink spots near the eyes. The flesh is light yellow, the sprouts are pink with spots. The eyes are shallow.
The variety is characterized by a very high dry matter content, exceeding 32%. Due to its texture, it is widely used in traditional Canarian cuisine, including the preparation of stews and Canarian-style potatoes.
