The potato variety Quincy was recorded in scientific studies as one of the tested samples. It was established that tubers of this variety possess a high potential for acrylamide formation during thermal processing, due to which it was characterized as unsuitable for frying because of the high content of reducing sugars.
The variety Quincy is used in breeding programs as a parental component. In particular, it was used in the creation of the variety Quintera, which was obtained as a result of crossing the varieties Sagitta and Quincy.
