Quarantina Bianca Genovese is an old local variety, known in the Genoa area since 1880. It received its name due to its short vegetation cycle, which historically allowed it to be successfully cultivated in mountain climate conditions at altitudes of over 300 meters above sea level.
Tubers have a round, sometimes slightly flattened shape, smooth light skin, and firm white flesh. A characteristic external feature is the presence of a pinkish halo around the medium-depth eyes. The flowers of the plant are white.
The variety belongs to the table group and is valued for its delicate taste qualities, being an important element of the local culinary culture. Currently, cultivation is limited to specific regions of Italy, where the variety is preserved as an object of cultural heritage.
