The variety is of French origin and was widely distributed in Brittany at the beginning of the 20th century. The tubers possess a characteristic oblong shape resembling a sausage, which is the source of the variety's name. The skin is red, and the flesh has a pale yellow or yellow tint.
The plant is distinguished by purple flowers and rarely produces seeds. The variety is characterized as late-maturing, possesses tender flesh, and a starch content of 12–14% with a protein level of about 2%. In the past, the variety was prone to degeneration due to viral diseases, which required special sanitary control of the seed material.
