The Russian winter soft wheat variety "Galatea" is characterized by high yield in the range of 7.3–9.8 t/ha and high winter hardiness of about 97%. The variety possesses high lodging resistance. The grain belongs to the valuable wheat category with a gluten content of 32–36% and protein of 12–13%; baking qualities are assessed as good.

The British variety "Galatea", registered in 1992, was bred based on the combination Sicco 'sib' x Galahad. Information about this variety in modern agronomic reference books is limited; it primarily appears in lists of genetic resources or as material for comparative breeding studies.

There are mentions of a "Galatea" variety bred based on the Indian wheat form Nap Hal, which is distinguished by low gluten content. In the early 2000s, this variety became the subject of patent disputes.
