The Pegaso variety is widely represented in scientific literature as an object for laboratory research. It is used to analyze the content of phenolic compounds and policosanols in bran, as well as a parental form in creating genetic lines of wheat with reduced levels of α-gliadins, which cause celiac disease reactions.
Scientific data confirm the use of this variety in experiments on the comparative analysis of flour quality and protein profiles, such as glutenin. The variety is not a production standard for cultivation in the Russian Federation and does not appear in broad agronomic catalogs.
