The Arcangelo variety is the result of breeding work crossing the Creso and Appulo varieties. It belongs to the category of crops widely demanded in Italy as raw material for the manufacture of pasta and specialized bakery products.

In official documents, the variety is mentioned as one permitted for use in the production of bread with a protected designation of origin (PDO Altamura bread). The variety is characterized by specific morphological features of the spike, awns, and grain, including the length of the brush hairs on the grain, while detailed agronomic quantitative characteristics are absent in open publications.
