Farrone is an ancient local wheat variety, references to which are found in 19th-century historical documents. In literature, it is classified as a traditional Sicilian grain variety, which is attributed both to the durum wheat group and the Triticum turgidum subsp. turanicum subspecies.
The variety was traditionally used for baking bread and biscuits. It is characterized by its adaptability to growing on poor calcareous soils, however, it is inferior to modern commercial varieties in terms of productivity and yield indicators.
